As you can see by Itzl's concerned look, this group is for us to check in at to let people know we are alive, doing OK, and not affected by such things as heat, blizzards, floods, wild fires, hurricanes, tornadoes, power outages, or other such things that could keep us off DKos. If you're not here, or anywhere else on DKos, and there are adverse conditions in your area (floods, heatwaves, hurricanes, etc.), we are going to check up on you. If you are going to be away from your computer for a day or a week, let us know here. We care!

Fruit salsa and Tortilla chips
Ingredients:
2 kiwis, peeled and diced 2 Golden Delicious apples - peeled, cored and diced 8 ounces raspberries 1 pound strawberries 2 tablespoons white sugar | 1 tablespoon brown sugar 3 tablespoons fruit preserves, any flavor 10 (10 inch) flour tortillas butter flavored cooking spray 2 tablespoons cinnamon sugar |
Directions:
1. | In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes. |
2. | Preheat oven to 350 degrees F (175 degrees C). |
3. | Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray. |
4. | Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture. |

Grilled Asian Flank Steak with Sweet Slaw Bon Appétit | June 2008
Yield: Makes 4 servings/Active Time: 30 minutes/Total Time: 1 hour
ingredients
- 1/4 cup soy sauce
- 5 tablespoons vegetable oil
- 5 teaspoons minced peeled fresh ginger, divided
- 1 garlic clove, pressed
- 1 1 1/2-pound flank steak
- 3 tablespoons sugar
- 3 tablespoons seasoned rice vinegar
- 1 teaspoon red pepper flakes
- 5 cups thinly sliced Napa cabbage (about 9 ounces)
- 3/4 cup chopped green onions, divided
preparation
Prepare barbecue (medium heat). Mix soy sauce, oil, 3 teaspoons ginger, and garlic in resealable plastic bag. Add flank steak and seal bag; turn to coat. Let stand at room temperature 30 minutes, turning occasionally.
Stir sugar and vinegar in small saucepan over medium heat until sugar dissolves; remove from heat. Add pepper flakes and remaining 2 teaspoons ginger. Place cabbage and 1/2 cup green onions in medium bowl.
Pour vinegar mixture over and toss to coat. Season with salt and pepper. Let stand while grilling steak, tossing occasionally.
Grill steak until cooked to desired doneness, about 6 minutes per side for medium-rare. Transfer to work surface. Let rest 10 minutes. Slice steak thinly against grain. Sprinkle 1/4 cup green onions over slaw.

Love's Barbecue Pit BBQ Baked Beans (I cut this recipe in half)
Ingredients
- 48 ounces pork and beans
- 2 tablespoons Worcestershire sauce
- 2 teaspoons chili powder
- 1⁄4 cup dark molasses
- 1⁄2 cup bottled chili sauce
- 2 tablespoons white vinegar
- 1 cup brown sugar
Directions
Combine all ingredients in bean pot or crock pot with lid, mix well.
Cover and bake at 400ºF for 1 hour for thin bean mixture, or 1-1/2 to 2 hours for thicker bean mixture.
Sprinkle with crumbled bacon bits to serve.

This is the bread recipe I always use. I mix it in the Kitchen Aid stand mixer and let it rest there before putting it in the bread maker to knead and rise. Remember, you have to plan ahead for sourdough.
Bread Machine Sourdough
A truly simple sourdough recipe that is kneaded in your bread machine. A great everyday bread for the sourdough lover.

Ingredients
- 3 cups bread flour 15.85 ounces/ 450 grams
- 1 cup lukewarm water 7.75 ounces/ 220 grams
- 3/4 cup fed sourdough starter 5.65 ounces/ 165 grams
- 1/2 tablespoon sugar
- 1 3/4 teaspoon salt
Instructions
- Mix the bread flour, starter, sugar, and water in stand mixer or bowl. It will seem dryer than most sourdoughs, but don't add more water. Use your hands to make sure everything is incorporated into a ball. Cover the bowl with a damp tea towel and let it rest 30 mins on the counter. (It helps to measure out the salt into a separate container on place it on top of the towel so you don't forget to add it later.)
- Place the dough and salt into the bread machine bucket and select the dough cycle. The machine will beep when the cycle ends, but let it rise another 2-3 hours in the machine, for a total rise time of 3-4 hours. The dough should look noticeably puffier, but may not have quite doubled in size.
- Prepare a baking sheet by lining with parchment paper and sprinkling with cornmeal. Take the dough out of the bread machine, and gently shape it into a round or oval loaf. The dough will be slightly sticky, but dry not to use any flour when shaping it. Place on the prepared baking sheet and cover with plastic wrap sprayed with cooking spray.
- Place the covered loaf in the refrigerator to proof overnight. Anywhere from 8-16 hours will be fine.
- In the morning, preheat the oven to 450 degrees with two racks: one in the center, one in the lower middle. Place an empty rimmed baking sheet on the lower rack while the oven is preheating. Remove the loaf from the fridge and gently rub with flour. Slash the loaf with a lame or sharp serrated knife.
- When the oven has preheated, pour 1 cup of water onto the empty baking sheet to create steam. Immediately place the loaf inside, close the door, and bake for 45 minutes. Let cool on a wire rack for at least 4 hours before slicing. 7. Store at room temperature, well wrapped, for up to three days.

Enchanting Apple Rose Tart

Ingredients
- 2 red apples
- juice of ½ lemon
- 3 Tbsp of apricot preserve
- cinnamon
- rectangular rolled out puff pastry
- flour for working surface
- icing sugar
Instructions
- Turn on the oven to 375°F/180°C.
- Wash the apples, cut them in halves and eliminate the seeds and hard parts, but keeping its red peel.
- Slice them as thin as possible and put them into a bowl filled with water and the lemon juice.
- Microwave them until soft (time depends on your oven and the apples, I needed 8 minutes).
- Put the apricot preserve and 2 Tbsp of water into a small bowl and microwave for 1 minute. Stir.
- Open the puff pastry on a floured surface and roll it out enlarging it a bit but keeping the rectangular shape.
- Divide it in 6 strips.
- Tale each strip and spread some apricot preserve on it.
- Add apple slices occupying half of the strip, with the round part up.
- Add cinnamon.
- Fold the puff pastry "closing" the apple on inside and then beginning from one extremity, fold it on itself.
- You have the rose.
- Put it inside a muffin mold and repeat with the other 5 strips.
- Bake them for 40-45 minutes.
- Add icing sugar before serving.
