IAN: Thursday 6/9/2022 Some Snack Recipes

I have posted a few of my favorite snack recipes.  Even if I don’t make them, they were yummy to read as I put them here.  Enjoy.

As you can see by Itzl's concerned look, this group is for us to check in at to let people know we are alive, doing OK, and not affected by such things as heat, blizzards, floods, wild fires, hurricanes, tornadoes, power outages, or other such things that could keep us off DKos. If you're not here, or anywhere else on DKos, and there are adverse conditions in your area (floods, heatwaves, hurricanes, etc.), we are going to check up on you. If you are going to be away from your computer for a day or a week, let us know here. We care!

We all share the publishing duties, and we welcome everyone who reads IAN to write diaries for the group! Every member is an editor, so anyone can take a turn when they have something to say, photos and music to share, a cause to promote or news!

Baked Pineapple

Ingredients

1 (20 ounce) can unsweetened pineapple chunks

3 tablespoons white sugar

6 tablespoons butter, melted

3 tablespoons all-purpose flour

5 ounces shredded Cheddar cheese

25 buttery round crackers, crumbled

Directions

Drain pineapple, reserving 3 tablespoons juice.

Combine pineapple, reserved juice, sugar, butter or margarine, flour, and cheese. Mix well. Spoon mixture into a buttered 1 1/2 quart baking dish; top with cracker crumbs.

Bake at 350 degrees F (175 degrees C) for 30 minutes, or until bubbly.

Cinnamon Cream Cheese Roll Ups

Ingredients

  • 1 loaf of thin, white bread
  • ⅔ bar of cream cheese (8 oz. bar), softened
  • ½ cup powdered sugar
  • ¾ cups sugar
  • 1 TB cinnamon
  • ½ cup butter, melted

Instructions

  1. Cut off the crust of the bread.
  2. With a rolling pin, flatten bread.
  3. In a small bowl combine cream cheese and powdered sugar until well blended.
  4. In a separate bowl combine sugar and cinnamon - set aside.
  5. Spread 1 - 1½ tablespoons of cream cheese mixture onto each flattened bread piece and roll up.
  6. Dip each rolled bread into melted butter and then into the cinnamon and sugar mix.
  7. Place on an ungreased cookie sheet.
  8. Repeat for remaining pieces of bread.
  9. Bake at 350 for 16-20 minutes until golden brown. Serve warm.
  10. ENJOY!

Smores crunchies

Tip: Spray your offset spatula with non-stick spray before pressing the RiceKrispies onto the parchment and again when you spread the marshmallow creme ontop of the Rice Krispies. This will make it easier to spread the Rice Krispieswithout becoming a sticky mess.

Instructions: 10 oz miniature marshmallows ¼ cup salted butter 5 cups Rice Krispies cereal ¾ cup graham cracker crumbs 7 oz jar marshmallow creme 1 1/2 cups miniature semi-sweet chocolate chips

1. Melt the marshmallows and butter in the microwave in a medium bowl for 1½minutes or until completely melted, stirring halfway through. 2. While the marshmallows are melting, mix the Rice Krispies and the grahamcracker crumbs together in a large bowl. 3. Stir the melted marshmallow mixture into the Rice Krispies. 4. Line a 10×15 jelly roll pan with parchment paper and spray with non-stickspray. 5. Press the Rice Krispies in an even layer to fill the jelly roll pan (or as Idid, a 13 x18 half-sheet pan that I filled ¾ full), 6. Spread the marshmallow creme evenly over the cereal layer and top with themini chocolate chips chips. 7. Place the pan in a 200F oven for 2 minutes, just long enough to startmelting the chocolate chips. Remove from the oven and spread the chocolate outin an even layer over the marshmallow creme. 8. Using the parchment paper, carefully roll the Rice Krispies treat into atight log. 9. Refrigerate for one hour and slice into pinwheels once the chocolate andmarshmallow are set.
